Lamb shanks are full of flavour and fall-off-the-bone tender when they are slow-cooked. They are the portion of meat around the leg bone right beneath the knee. It is the meat that comes from the harder working part of the animal therefore it needs a nice long slow roast, or braised. The meat will then be so tender it'll fall right off the bone and melt in your mouth.
