Fresh Red mullet, also known as the “Goatfish”, is an astonishing fish to look at due to its unique bright shimmery red skin. Mullet has a rich, nutty taste. Its high oil content and flavor have earned it the nickname, “Biloxi bacon.” The texture is unique, somewhere between white and oily fish. The raw flesh is white and cooks up white, firm and juicy.
Red mullet is a light-pink fish with a jacket of scales and is classified as a round white fish but has a richer and more satisfying flavour than most thanks to its higher fat content. It is sometimes compared to shellfish in taste, and in fact feeds on them. Red mullet fillets are part of the goat fish family but are unrelated to grey mullet.
